When your kids compliment a recipe made with Brussels sprouts, you know you’ve found a winner! This crispy slaw is a sweet-tart mixture of complementary flavors. It’s also full of hormone and blood sugar balancing ingredients. Perfect any time of year.
Ingredients
- 1.5 lbs Brussels sprouts, shredded or shaved
- 2 crisp apples, such as Honeycrisp, cored and chopped or shaved
- 3 tbsp shallots, minced
- 1/2 cup extra virgin olive oil or avocado oil
- 1/4 cup plus 2 tablespoons raw apple cider vinegar
- 3 tbsp honey
- 1 tsp salt
- 1/4 tsp freshly ground black pepper
- 1 cup pecans, lightly toasted and coarsely chopped
Instructions
- Clean the Brussels sprouts, removing outer leaves as needed. Shred or shave by hand or by using a food processor or mandolin.
- Core the apples. Do not peel. Chop apples by hand or shave them using a food processor or mandolin.
- Make the dressing by combining shallots, oil, apple cider vinegar, honey, salt and pepper.
- Combine Brussels sprouts and apples.
- Pour dressing over Brussels sprouts and apple slaw. Toss thoroughly.
- Roast and chop pecans. Combine with slaw.
Notes
The dressing can be made in advance. Wait until serving to pour over the slaw.
Add 1/2 cup shaved parmesan or asiago cheese for an added twist.
