Ingredients
  

  • 1.5 lbs Brussels sprouts, shredded or shaved
  • 2 crisp apples, such as Honeycrisp, cored and chopped or shaved
  • 3 tbsp shallots, minced
  • 1/2 cup extra virgin olive oil or avocado oil
  • 1/4 cup plus 2 tablespoons raw apple cider vinegar
  • 3 tbsp honey
  • 1 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 cup pecans, lightly toasted and coarsely chopped

Instructions
 

  • Clean the Brussels sprouts, removing outer leaves as needed. Shred or shave by hand or by using a food processor or mandolin.
  • Core the apples. Do not peel. Chop apples by hand or shave them using a food processor or mandolin.
  • Make the dressing by combining shallots, oil, apple cider vinegar, honey, salt and pepper.
  • Combine Brussels sprouts and apples.
  • Pour dressing over Brussels sprouts and apple slaw. Toss thoroughly.
  • Roast and chop pecans. Combine with slaw.

Notes

The dressing can be made in advance. Wait until serving to pour over the slaw.
Add 1/2 cup shaved parmesan or asiago cheese for an added twist.
