Ingredients
- 2 salmon filets 4-6 oz each
- 1 cup fresh organic blueberries
- 2 tbsp balsamic vinegar
- 1 tbsp honey or real maple syrup
- 1 clove garlic, minced
- 1 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
- Prepare the glaze. In a small saucepan, combine blueberries, balsamic vinegar, honey and garlic. Heat over medium heat, stirring occasionally, until the blueberries burst and the mixture thickens slightly (5-10 minutes). Set aside.
- Prepare the salmon. Place salmon fillets on the baking sheet. Brush with olive oil and add salt and pepper. Roast in the oven for 12-15 minutes, until the salmon is flaky.
- Remove the salmon from the oven. Spoon the blueberry glaze over the salmon filets. Serve immediately.
