Ingredients
  

  • 2 salmon filets 4-6 oz each
  • 1 cup fresh organic blueberries
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or real maple syrup
  • 1 clove garlic, minced
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  • Prepare the glaze. In a small saucepan, combine blueberries, balsamic vinegar, honey and garlic. Heat over medium heat, stirring occasionally, until the blueberries burst and the mixture thickens slightly (5-10 minutes). Set aside.
  • Prepare the salmon. Place salmon fillets on the baking sheet. Brush with olive oil and add salt and pepper. Roast in the oven for 12-15 minutes, until the salmon is flaky.
  • Remove the salmon from the oven. Spoon the blueberry glaze over the salmon filets. Serve immediately.

Notes

Salmon can be grilled rather than baked. 
Pairs well with roasted vegetables, a green salad and/or a whole grain (quinoa, brown rice).
