Easy Salmon Burgers
Ingredients
- 3 6-oz cans wild salmon drained
- 3 large eggs beaten
- 1/4 cup onions or shallots minced
- 2 large cloves garlic minced
- 1/3 cup sour pickles minced
- 1/4 cup fresh dill minced
- 3 tsp Dijon mustard
- 1/2 tsp salt or to taste
- Pepper to taste
- Coconut flour to absorb moisture (about 1 Tbsp)
- 1/4 to 1/2 cup coconut oil, avocado oil, butter or ghee for the pan
Lemon Dill Sauce
- 1/2 cup avocado oil mayonnaise
- 1 tsp lemon zest
- 2 tsp lemon juice
- 1/4 cup fresh dill minced
- 1/2 tsp garlic powder
- Salt to taste
Instructions
- Combine eggs, onions, garlic, pickle, dill, mustard, saltand pepper in a large bowl. Add drainedsalmon to the bowl, flake it apart with a fork and combine with otheringredients. Add enough coconut flour sothat the mixture isn’t runny and holds together well. Form equal-sized patties with the mixture andpress tightly together. Heat the oil onmedium heat. There should be about1/4-inch oil on the bottom of the pan. The patties tend to break apart, so handle gently as you put them in thepan to cook. Cook on the first sideuntil nicely browned, about 6-8 minutes. Gently flip the burgers over and cook foranother 6-8 minutes until cooked through and both sides are golden brown. Combine all the Lemon Dill Sauce ingredients together. Top each burger with a dollop of sauce.
