Creamy Chocolate Avocado Pudding
- 2 ripe avocados, mashed
- 2/3 cup canned unsweetened full-fat coconut milk
- 1/2 cup unsweetened cacao (or cocoa) powder
- 3-4 tbsp pure maple syrup
- 2 tsp vanilla extract
- 1/4 tsp sea salt
- Put all ingredients in the blender and blend until creamy. Pudding will be thick. Spoon into single-serving bowls. Chill. Before serving, garnish with cacao nibs, mini chocolate chips or berries.
