These simple and delicious gluten-free lettuce wraps make an easy weekday meal. They’re full of Asian flavors and healthy ingredients that are antioxidant, anti-inflammatory, detoxifying and immune-boosting.

Ingredients
- 2 tbsp coconut oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp ginger root, minced or grated
- 1 lb ground turkey
- 1 cup shiitake mushrooms, chopped
- 1/4 cup coconut aminos
- 2 tbsp tamari sauce (gluten-free soy sauce)
- 1 tbsp rice wine vinegar
- 1 tsp Sriracha sauce
- 1 8 oz can water chestnuts, drained and chopped
- 2 green onions, thinly sliced
- Salt and pepper to taste
- 1 head butter lettuce
Instructions
- Sautee onion, garlic, ginger and mushrooms over medium heat until onions are translucent.
- Add ground turkey and cook until browned.
- Add coconut aminos, tamari sauce, vinegar and Sriracha sauce. Let simmer for 5-10 minutes.
- Add water chestnuts and green onions and cook for 2 more minutes.
- Season with salt and pepper. Spoon onto lettuce leaves.
- Spoon onto lettuce leaves.
Notes
- Ground turkey can be substituted with ground/chopped chicken or cubed organic tofu.
- Additional vegetables such as shredded cabbage and snow peas can be added.
