Ingredients
  

  • 2 tbsp coconut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp ginger root, minced or grated
  • 1 lb ground turkey
  • 1 cup shiitake mushrooms, chopped
  • 1/4 cup coconut aminos
  • 2 tbsp tamari sauce (gluten-free soy sauce)
  • 1 tbsp rice wine vinegar
  • 1 tsp Sriracha sauce
  • 1 8 oz can water chestnuts, drained and chopped
  • 2 green onions, thinly sliced
  • Salt and pepper to taste
  • 1 head butter lettuce

Instructions
 

  • Sautee onion, garlic, ginger and mushrooms over medium heat until onions are translucent.
  • Add ground turkey and cook until browned.
  • Add coconut aminos, tamari sauce, vinegar and Sriracha sauce. Let simmer for 5-10 minutes.
  • Add water chestnuts and green onions and cook for 2 more minutes.
  • Season with salt and pepper. Spoon onto lettuce leaves.
  • Spoon onto lettuce leaves.

Notes

  1. Ground turkey can be substituted with ground/chopped chicken or cubed organic tofu. 
  2. Additional vegetables such as shredded cabbage and snow peas can be added.
