Creamy Chocolate Avocado Pudding

Ingredients
  

  • 2 ripe avocados, mashed
  • 2/3 cup canned unsweetened full-fat coconut milk
  • 1/2 cup unsweetened cacao (or cocoa) powder
  • 3-4 tbsp pure maple syrup
  • 2 tsp vanilla extract
  • 1/4 tsp sea salt

Instructions
 

  • Put all ingredients in the blender and blend until creamy.  Pudding will be thick.  Spoon into single-serving bowls.  Chill.  Before serving, garnish with cacao nibs, mini chocolate chips or berries.

Notes

For a sugar-free version, substitute stevia or monkfruit to taste for the maple syrup.
